A bowl full of vegetables and cottage cheese is filling and the best choice for dinners. The shape of the vegetables matter a lot when it comes to the taste of the salad. I prefer Juliennes for spaghetti pastas and noodles. The shape suits vegetable stir fry as well. I loved the recipe. Check it out:
- In an iron pan, stir fry juliennes of 1/2 cut carrot, 1/4 green bell pepper, 1/4 red bell pepper, and 4-5 baby corns thinly cut;
- You may also add 3 cloves of chopped garlic;
- Stir fry in high flame for 2 minutes and reduce the flame to medium high;
- Add salt to taste, 1 teaspoon pepper and 1/2 a teaspoon red chilli powder;
- Also add 1/2 teaspoon vinegar and soy sauce;
- Continue to stir fry (in medium high for 3 minutes);
- Add thinly cut cottage cheese (around 100 grams as in the photo) above and a few olives;
- Give it a mix;
- Stir fry for 1 minutes, garnish it with oregano, Italian herbs and coriander leaves and it's ready to serve;
- This serves 2 people.
Prepare and let me know how it tasted :) Addition of garlic inspired by Tarla Dalal
